Raw cocoa and avocado chocolate mousse with brandied summer berries
- 2 large ripe avocados
- 1/3 cup chilled coconut cream
- 1/3 cup raw cocoa powder
- 80ml pure maple syrup
Scoop the contents of the avocado into a blender add the cocoa and maple syrup and blend for one minute. Slowly add the coconut cream until mixture is smooth and creamy. Remove mixture from the blender and place into a piping bag or bowl. Place mixture in fridge until needed.
Brandied summer berries
- 3 table spoons fresh black berries
- 3 table spoons fresh raspberries
- 3 table spoons fresh blueberries
- 1 table spoon of pure maple syrup
- 1 table spoon brandy
Place all ingredients in a bowl and gently mix. Place aside for ten minutes.
You will need 4 small jars or glasses.
Spoon a small amount of the berry mixture into the bottom of each jar or glass. Then pipe or spoon in a little of the mousse repeat process three or four times until jar/glass is full.
Garnish the top with some fresh berries and mint.
